Jennifer Lopez amongst being many things, is primarily known for her everlasting fountain of youth she seems to keep in her front yard. After watching The Back-Up Plan in 2010, I quickly became intrigued with her self-care habits as she didn’t look a day over 28 ! ( The actress is now 49 years young! )
In an interview I had watched a couple years ago Jennifer had been asked how she keeps her body healthy and fit while maintaining her youthful glow. To my surprise.. her answer was Baked Blueberry Oats in the morning ! Wha?? I’m IN.
Blueberries are known to have tons of antioxidants, being great for reversing the aging process on our cells. Oats on the other hand are packed with fibre, which help us with regular bowel movements ( important for keeping that waistline tight ). Oats are also a wonderful sidekick for lowering levels of bad cholesterol. Alongside the pecans, this recipe calls for cinnamon. For those of you who are not aware of the magical benefits of cinnamon, here are a few:
Rich in antioxidants, anti-inflammatory properties, reduces risk of heart disease, combats infections, and most importantly fights cancer and diabetes. A round of applause for cinnamon please.

Amazing isn’t it? So now that you’re sold lets get to the recipe
Here’s What You Will Need:
Ingredients
2 cups old fashion oats
⅔ cup pecan and walnut bits
2 tsp cinnamon
1 tsp baking powder
1 ¾ cups milk ( opt for dairy free! Better for the gut, I use Oat or Almond )
⅓ honey ( sub for maple syrup if honey is not available, lower to ¼ for less carbs + sugar )
2 large eggs
3 Tablespoons unsalted butter or coconut oil
2 tsp vanilla extract
2 ½ cups blueberries
Pinch of sea salt
Pinch of nutmeg
Instructions
- Preheat oven to 375, if the nuts are raw throw them in the oven for 5 minutes to toast until fragrant. Prep 9-inch baking dish by greasing it with butter (or coconut oil)
- In the first mixing bowl, combine the dry ingredients ( oats, nuts, cinnamon, baking powder, salt and nutmeg ) & whisk until combined.
- In the second mixing bowl, combine the milk, honey, egg, vanilla and ONLY HALF the butter ( 1 ½ tbsp, the remainder is used to drizzle on top ) & whisk until blended. If the butter or honey hardens, place bowl in microwave for 20 seconds and immediately whisk.
- Sprinkle a handful of blueberries to fill the bottom of the pan. Reminder; do not defrost frozen blueberries first. Now evenly cover the fruit with the dry oat mix, then drizzle the wet ingredients over top ensuring all the oats are being soaked. Wiggle the dish to ensure this. I personally will place the remaining blueberries on top of this dish, but you also have the option of layering this into 2 ( ie blueberries in the middle )
- OPTIONAL: Sprinkle some raw sugar on top if you like it sweeter and crunchier.
- Bake for 42 minutes, until golden. Once baked, let cool then pour the remainder of the butter on top.
- ENJOY! Pack up and leave in fridge for enjoyment up to 5 days. Serve cold or warm.
